Bio
arc has over thirty years of experience in the hospitality industry, beginning his career as an apprentice chef in Switzerland in 1993.
His career has taken him across Europe and Australia, where he has gained extensive knowledge and experience in many areas of the industry. Marc has supported the successful launch of numerous venues, including hotels, restaurants, coffee shops, and high-volume food production services.
He has owned, operated, and sold two hospitality businesses in Sydney and has coached and trained many staff along the way.
His coffee shop in Crows Nest on Sydney’s North Shore provided invaluable insight into operating and managing an Australian business, giving him a solid understanding of both the rewards and challenges from an owner’s perspective.
Marc’s second business, The Fit Chef—a meal preparation company he operated for seven years—strengthened his ability to maintain tight cost controls. As meals in this type of business are typically sold at lower price points than in sit-down venues, he refined his financial costing and COGS management skills.
Through his varied experience, Marc has learned the importance of adapting to each individual business. He fully appreciates that every client’s needs are unique.
Working in hospitality has allowed Marc to develop exceptional customer service skills, and he prides himself on maintaining a positive and professional approach in everything he does.
