Paul Rottenberg came to Des Moines in 1987 to join the historic Hotel Fort Des Moines, where he started with restaurant operations and eventually served as general manager for more than a decade before founding Orchestrate Hospitality in 2000. Over the years, Paul has developed and is a partner in Centro, Django, Malo, Gateway Market & Café, Zombie Burger, Liberty Street Kitchen, Main Street Markt, Hilton Garden Inn Des Moines/Urbandale and Holiday Inn Express and Suites in Altoona, with achievements including his award-winning work in the restoration of the landmark Temple for Performing Arts and the creation of Centro restaurant which helped spur a renaissance in downtown dining and commercial development. Paul has served on the founding board of the Iowa Hotel & Lodging Association, on the board of the Des Moines Convention and Visitors Bureau, and was named one of Des Moines' most influential business leaders by the Des Moines Register in 2006, Restaurateur of the Year by the Iowa Restaurant Association in 2017, and Iowa Hotel & Lodging Association Hotelier of the Year in 2025.
